炸醬麵 Cantonese style ZhaJiangMian. Literally that in Guangzhou 廣州. I have eaten quite a few editions within China and Canton 廣東省, but ironically? I think only Hong Kong is the oddity - where the pork meat is usually served 'sliced' into slivers, not 'diced' like a grinded meat into a ragout. I like them both so it's kinda hard to pick 😜😍😍

Our light and hearty fish porridge is a great comfort food that's easy on the tummy, and so simple to make!
This Teochew dish favoured for its easy-to-digest mildness and help in detoxing the body. Surprisingly, it was once considered bad luck to have porridge on Chinese New Year because it was seen as a food for the poor. Now, the humble porridge is something many of us look forward to as a yummy relief to break up those indulgent meals.
While the Cantonese style of porridge is akin to a thick and creamy gravy with thin slivers of meat or spares, the Teochew style sees a clear broth with nicely separated rice kernels - often cooked al-dente, or "just about right" - and glorious chunks of fish.
Here we've put together a recipe which combines wholesome ingredients in a light summery broth, infused with several layers of flavour, and accompanied by mouthwateringly tender flakes of white pomfret in a light crispy batter. This complex flavour profile is surprisingly easy to create. The delicate fragrance of the soup is achieved using a simple concoction of sole, shrimp and cuttlefish. Pickled vegetable and julienned ginger add that gentle acerbic touch.
Top with garnish and you have just the perfect taste of home, sure to ease and lift the spirit of any starry-eyed or weary warrior around the world!

烹調時間:60分鐘 食材費用:$30
這菜式比一般番薯蓉特別,配搭香脆蒜片,富有東方色彩,帶來獨特香味和口感。
材料
番薯 300克
鹽 1/2茶匙
牛油 1湯匙
調味雞汁 1茶匙
胡椒 少許
鮮奶 80毫升
炸蒜片 20克
做法
1.將鹽撒在番薯上,用猛火蒸45分鐘至軟身。
2.擱涼後,剝去番薯皮,用叉子及篩子將番薯壓成蓉。
3.將番薯蓉,加入牛油、調味雞汁、胡椒及牛奶拌混至軟滑,不要太稀。放入已預熱至攝氏190度焗爐內,焗10分鐘至金黃色。取出,撒上炸蒜片,趁熱食。

可按喜好加入煙肉粒或免治豬肉。
MASHED SWEET POTATO WITH GARLIC SLIVERS

This is a sweeter and more oriental twist to the standard mashed potato. The crispy garlic gives it a special fragrance and different 口感。
INGREDIENTS
300 g Sweet potato
1/2 tsp Salt
1 tbsp Butter
1 tsp Concentrated Chicken Stock
Dash of white pepper
80 ml milk
20 g crispy garlic slivers
STEPS
1.Sprinkle salt over sweet potatoes and steam over high heat till soft, about 45 min.
2.Cool and peel skin off. Mash with fork, then pass through a fine sieve.
3.Mix sweet potato with butter, concentrated chicken stock, white pepper and milk till smooth but not runny. Bake in preheated oven of 190 degrees will the top turns golden brown, about 10 min. Remove and sprinkle garlic slivers on tip. Serve hot.
TIPS
You can add diced bacon or minced pork.
