We just got back from Vietnam where went crazy eating vegan Vietnamese food, once you get past the language barrier, you realize it’s the perfect country for vegans to visit. One thing we ate over and over were these amazing spring rolls, grilled to a flaky perfection and served with a mountain of vegetables. Of course as soon as we were back in Bangkok, Tae went to the kitchen studio and made his own version.

Ingredients
Rice paper wrappers http://amzn.to/2jygy21
¼ Head of medium cabbage
3 cups of Mixed Mushrooms (any kind of mushrooms)
1 cup of soaked glass noodle
1 Teaspoon of Black Pepper
3 Tablespoons of mushroom sauce
1 Tablespoon of black soy sauce (not necessary)
1. Slice up all the vegetables nice and small.
2. Pan fry the veggies together with the glass noodles. Slowly season and taste as you go.
3. Lay out the spring roll wrappers, use your fingers to lightly wet each one (don’t soak in water), spoon the results of the previous step into the center and fold into a square.
4. Grill each square until flakey and juicy.
5. Serve.
6. Impress your guests.
7. Make everyone jealous at the potluck :)
